As you can tell from my recent posts, my focus lately has been on diet and exercise. Now that the Holidays are over, I'm enjoying the challenge of getting back in shape.
So far, so good!
I'm cutting back on the "bad" stuff and incorporating more healthy things into my diet. And I've increased my exercises. Just ask my legs and I'm quite sure they would be happy to report the "abuse" they are getting. LOL! I'm using Myfitnesspal.com to record what I'm eating and what exercises I'm doing. It figures the calories, carbs, fat, protein, etc. and calories burned. Pretty cool!
Here's where YOU can help me...
I would love some ideas of low carb and/or low fat meals that you enjoy.

My pleasure! I've been low carb "mostly" for several years. lowcarbfriends.com has a recipe suggestion part of thier bulletin board that is great, and ordering some products from netrition.com is a way to fire up some recipes. That said....here are some quick favorites:
- Crock pot chicken taco soup
- Crock pot 5 italian sausage (remove casing) over 3 quartered tri-color peppers
- salami with cream cheese roll up
- antipasto platter (cheese, mozzarella balls, salami, parmesan crisps, olives, cucumbers sliced and marinated in italian dressing, grape tomatoes)
- pork rinds and egg salad
- strawberries
- mini cheesecake
I don't know but I know someone who does. Her name is Michele and she is over at Fake It Til You Make It. She eats that way.

I have one that comes to mind quickly.
Salsa Chicken:
Boneless, skinless chicken breasts (however many you desire)
Salsa of your liking
Place chicken breasts in 9x13 or 8x8 pan. Pour Salsa over top. Bake at 350 degrees for 45 minutes. Sprinkle a small amount of cheddar cheese over chicken and return to stove for a minute to melt it.
The chicken is yummy and moist, and very low carb!

I pretty much try to eat low fat/low cal all the time. When I am at a weight acceptable to ME, I eat real good during the week and on weekends I splurge! I have to. It's not going to be *long term* if I don't. My *go to* things usually always include vinegar. I love it! It's always a healthier base that mayonnaise or some other cream sauce. My salad dressings are vinegar based too. Favorite: Good Seasons Italian in the dry packets. They sell the mixing bottle to go with them in the grocery store. Mix the dry packet with vinegar, olive oil and water. It is FAB! Also, call me weird, but I open a can of green beans or asparagus. Drain them and top with some vinegar. Great snack or filler to go with lunch or dinner. Happy Healthy eating!
Here is a recipe for a breakfast shake:
3-oz. cube cream cheese
½ cup Eggbeaters w/ yolk (yes it's safe to drink)
¼ cup heavy cream
1 T DaVinci's or Atkins syrup - any flavor!
4 ice cubes
Blend all but ice for 30 seconds. Add ice last and blend. About 6 carbs and makes 1 serving.

You really want to make sure you are lifting weight too!!!!!!!!!!!
I can't even stress just how important this is...maybe even more so than cardio as a women who is in menopause!
The more muscle you have...the more calories your body burns at resting!
Also...be sure you are doing intervals in your cardio! So if you are walking...add in 30 second intervals of running!
Say...2 min. walk
30 sec of running!
Intervals burn more calories!!!

I do remember one time long ago, I went on a low carb diet, and all of a sudden I was so weak I couldn't walk; come to find out I was only eating half the carbs I was supposed. lol

I want to diet too.....I used to know how. I did weight watchers for about three years and ate the healthiest I have in my life. But now? I can't think of a thing to cook. I'm going over to check out that food blog that was mentioned!
You are doing great! My go to is Greek Yogurt with honey and walnuts. Sooo good and good for you!

I've started Weight Watchers online and love it. The points system is easy to use (most fruits and veg have zero points!) and they have all sorts of handy tools for finding out the points in the recipes you already have and provide zillions of their recipes online.
Here's a lovely Cuban dish, Kat...we call it black bean stack...very simple and filling and low fat, too
Cook a pot of rice
cook a pot of black beans (salt only at the end of cooking, with a tablespoon of olive oil)
Chop a large onion and set aside
grate some low fat cheddar cheese and set aside
carton of lowfat sour cream
jar of salsa, medium or hot your choice
In a bowl or on a plate for one serving:
one scoop of rice
top with scoop of black beans
top with some onion (raw)
top with some salsa
top with some cheese
top with some sour cream
Eat down thru the stack so that you get a taste of everything on your stack...lovely taste and very filling. Serve with tortilla chips or corn chips if you wish, but not necessary.

What a great idea to ask around. I don't have many low carb ideas so if you don't mind I will steal a few from here. Hope you do well with the diet and exercise, you seem to do pretty well with the bike riding and Tennis I have always admired the active life you have shared with us on your blog.

I am hearing more and more good things about Greek yogurt...and am using it in breakfast shakes....
I make a breakfast smoothie that I love -
1/2 c. old fashioned oats
1 scoop protein powder
1/2 c. water
1/2 c. milk
1/2c. frozen blueberries
about 4 pieces frozen mango
1-2 T. flax seed
Put it all in a bleder and blend till smooth.
