I love, love, love sweet Vidalia Onions! I picked up a big bag last Sunday on the way home from Atlanta. I got them ready for the pantry yesterday afternoon. I cut the legs off an old pair of pantyhose and filled them with the onions. I tied a knot in between each onion. I'll hang these in my pantry. (I think it's best if you keep them in a place where it's cool and usually dark.) Whenever I need one, I just cut below a knot.
I read that the Vidalia Onion story began over 70 years ago in Toombs County, Georgia. In 1931, a farmer by the name of Mose Coleman discovered the onions he had planted were not hot…they were SWEET! It was a struggle to sell the concept of a “sweet” onion though. It took awhile for them to catch on, but I'm so glad they did.
I love to make vidalia onion dip. I love to put these on burgers. I love to use them when I stir fry peppers and onions for our sausage sub sandwiches.

I agree with you here, Kathy, they are the best. Back in 1969 we were driving through Georgia and Mother wanted to stop and buy these onions. That was the first time we were introduced to them. Now we can buy them in our grocery store called Giants.
I never thought of storing them like that. What a novel idea. I usually keep them in the veg. bin in the frig. We go through a lot of onions.
That is a good idea about storing those onions...you should have saved that suggestion for a 'Works for Me' Wednesday! :-) I like those kind of onions to, by the way.

By the way, our favorite way to eat Vidalia onions is to core them (leaving the bottom of the onion intact) and then stuff two small bullion cubes into the center along with some butter. Wrap in foil and throw them on the grill. YUMMY! It's delicious!

Have you ever had Vidalia onions on the grill? I have a great recipe for baking or grilling them with butter, chicken bullion and brown sugar. Oh my... so delicious!
