BY REQUEST

 
I mentioned in my last post that I made a cold spaghetti salad for our church picnic tomorrow and several of you have asked for the recipe.  It's been so hot lately that I knew I would want to take something cool and refreshing.  I'm taking a cooler to keep it in while we are in church.  (I've taken this salad before to a pot luck dinner at church and it was a hit.)
It makes a lot!  It's hard to tell from the photo, but this is a LARGE bowl of "wonderfulness"!

Kat's Cold Spaghetti Salad

1 pound of vermicelli pasta
1 small bottle of Kraft Seven Seas Viva Italian dressing
1/2 (or more) of a bottle of McCormick Salad Supreme
1 bunch of green onions
3 or 4 tomatoes
2 or 3 cucumbers 

Cook and drain pasta.  Cool pasta.  Chop onions, tomatoes and cucumbers.  Mix all together with dressing and salad seasoning.

I think it's best if you let it marinate overnight.  Add more dressing and salad seasoning if desired.

Boy that does look refreshing Kat! Reminds me of a healthier version of a cold pasta salad I make a lot year round....basically pasta and italian salad dressing, and whatever else I have on hand...like pepperoni, mozzarella, shredded parm, chopped red pepper, green onion. Yummy! Good luck on house sale. Patience is not my virtue...just know the good Lord is watching out for you and in time, all good things will come your way.

You aren't wrong about the heat down here. It's finally cooled off here due to all the rain. This dish looks fantastic. We are having a family reunion in August and this is just the perfect dish to make. Thank you for sharing.

That looks wonderful, Kat. I am going to try it...soon!. Sorry the house still hasn't sold...but when the time is right, it will. If we could only remember that God has it already worked out, we'd be so much better off. But, time and time again, I think it HAS to happen NOW! This is a recipe that I have made before and it is very delicious! People always love it!! I think the key is the McCormick seasoning mix! Thanks for sharing... it made me want to make it again! It is a great summer salad. Love & blessings from NC!
