SWEET

Talk about SWEET!

And so delish!

I saw a recipe for Triple Coconut Cake here and just had to try it since George and I LOVE coconut.  It was easy and oh sooooo good.  Our friends Mary and Larry love coconut too, so we invited them out for Mexican and then came back to our house last night for dessert.  They loved it.  In fact, Larry ate two BIG pieces.  I sent them home with 4 more slices.  Believe me, I don't want too much of this around.  Yummy!

TRIPLE COCONUT CAKE

Ingredients:
1 Betty Crocker white cake mix
1-1/4 cup Coconut Milk
1 can cream of coconut
8-ounce container of whipped topping
1 cup flaked coconut


Directions:
Prepare cake mix according to directions on the box, substituting coconut milk for water in the mix. Bake in a 9×13 pan. Aimee and I both thought the cake was done at least 5 minutes before the box directions predicted. Over bake and the crust will be too dry to absorb the cream of coconut.
While the cake is still warm, poke holes all over the cake with a skewer.
Warm cream of coconut for 1-1/2 minutes on HIGH in the microwave and pour over the cake. Chill for several hours or overnight.
Frost with 1 container of thawed, whipped topping (i.e. Cool Whip). Sprinkle flaked coconut on top. Keep refrigerated.  (I think it's even better the second or third day...if it lasts that long!)

We got a long hard rain shower this afternoon.  That in itself is SWEET, but the new Thundershirt we got for Miss Daisy helped.  Our girl does not like bad weather, especially thunder (and fireworks).  Anything that will make our girl feel better is SWEET...for her and us.

SWEET! 
It worked.  Her tail was down any time it thundered and she would look up at the sound, but she didn't cower under the furniture shaking like she usually does.  Actually, I got on the treadmill and she settled in and dozed while I walked.  Amazing!

WORDS


WORDS ARE POWERFUL!
The sting from your words can hurt far longer than any physical cut or wound.


I won't go into any detail, but I received an email this morning from someone that I considered a friend that hurt me very much.  They took it upon themselves to judge me.  This is someone who only knows me through my blog, but it became very clear that they in fact do not know me.  They do not know my heart.  

Their words CUT me and my heart bled.



Tonight I am praying for my hurt and anger to leave.  I will also pray for this person too.

MY WEEKEND IN PHOTOS

Friday Night
Sixteen of us went to First Note Music Hall for a night of food, drinks and music.  And lots and lots of fun!

Matt Miller on the fiddler played with them all.  He goes to our church.  He's going places.  No doubt.
The Henningsens - Incredible songwriters and performers that were just signed on by Sony.  You're gonna be hearing a lot about them.  Trust me!
See that knee to the right?  It's George's.  That's how close we were to the stage. 

We had a ball.  We're going again this coming weekend.  Can't wait.

Saturday
George and I drove to my hometown for an all day (and half the night) pool party to celebrate our son-in-law's birthday and his retirement from the military AND his daughter Liz's graduation from Cosmetology school.

Our grandson Zac and his band played music under a tent out by the pool.  Thankfully, all the neighbors in their cul-de-sac were invited because things got LOUD!  Especially later when their rapper joined them after dark.

I didn't take many photos of people, but I did take some photos of the food ;-)

A quick story about Zac.  I know I've blogged about this before.  When he was a teenager he kept his hair VERY short.  I hated it.  I'm a MeMe who loves LONG hair.  (As long as it's clean and neat.) I used to beg him to grow it out.  No luck.  I even tried to bribe him with money.  No luck.  I told him the girls would love him even more with long hair.  No luck!

Here he is back then with his two sisters.  

 
 And here he is today!  Much better.

I GOT A FEELING...................




It's hard to listen to this song without getting up and dancing.  A definite weekend song.  Actually, I'm jamming in my seat just listening to it now.  wink wink

Sixteen of us have fun plans tonight.  Can't wait!

And guess what?  George and I also have fun plans on Saturday.  Woo Hoo!

Life can be so SWEET sometimes, right?

GOOD


Tennis was good this morning.

I made some good chicken salad for lunch.

I got in a good workout on the treadmill this afternoon.

My flowers and grass are looking good after all the rain we've had.

I had some good long talks with the kids and my sister Kim today.  Just catching up.

George grilled a REALLY good steak for me tonight.  And the Chianti was good too.

We have some good plans for the weekend.

Good grief, it's almost midnight.  No wonder I'm tired!  

My bed is gonna feel good in about 2 minutes ;-)

LOL




LOL - to laugh out loud

We throw that turn around a lot, at least I do, but we don't always mean we honestly laugh out loud.

But this morning I did.  A big ole belly laugh. Luckily, I wasn't drinking my coffee at the time,  because I would have had a big mess to clean up if I was.  Coffee would have been spewed everywhere!

I opened up facebook and here's what Bree had posted:
32 weeks!!!
Jay looked in the fridge last night and said, "Daven will be here before the cheese goes bad." :)
I've laughed all day every time I think about it.  
Tooooo funny!

Hey, I can be funny too...did you notice I put a laughing mouse since we're talking cheese ;-)

I DECIDE

Yesterday was a BLAH day for me.  I didn't leave the house.  I just gave in to it and spent most of the day "piddling" around the house.  Reading.  Blogging.  Playing computer games.  Nothing productive.  Well.....I did walk an hour on the treadmill.  And then promptly ate 3 chocolate chip cookies  ;-)  A girl's gotta do what a girl's gotta do Right?
Today's a new day.  I might still feel a little BLAH (still not sure why???), but I'm gonna put on some makeup and perfume and MAKE IT A GOOD DAY.

I'm going to TUESDAY LUNCH BUNCH with sweet friends and it's gonna be fun.  It always is.

My decision

We all get to choose!

Today I choose HAPPINESS!

LORD, I NEED A TUNE-UP



Ever had one of those "God, it's great to be alive!" days?

Yep, me too.  LOVE those kinds of days!

Not today though.

Not sure why, but I felt "down", "blah", "sad" when I opened my eyes this morning.

Crazy, since I was fine when I went to bed last night.

When I sat at my computer with my cup of coffee this morning, I read this prayer in one of my email devotionals:

Lord I ask you to take my heart and my mind today.

Give me a tune-up if you will...
A spring cleaning...
A software update...


That's my prayer today.

OH, BABY!

We had the best time at a couples baby shower last night for Bree and Jay.


The shower was given by these beautiful girls!  What sweet friends!  I love them all!
Thank you Nikki, Sarah, Nikki, Lisa, Leslie and Amy for loving our girl!



The food was incredible!

I should have taken photos of the STACKS AND STACKS AND STACKS of gifts.  I think it took three cars to take everything home.

After dinner, we went to see THE HELP.  I'm sure most of you have seen it already, but we all wanted to wait to see it with Bree...in Jackson, MS.  That's where the movie takes place.   We all LOVED the movie.

Here's another fun memory from the trip.
When we got back to the hotel on Thursday night, since our rooms were literally right across the hall from each other, we all put on our jammies and I joined the girls in their room for a late night cocktail and some girl time.  George was happy to watch sports in peace in our room ;-)  Sherry gave me a beautiful GRANDMOTHER'S BOOK - fairy tales, poetry, nursery rhymes, songs, activities and recipes.  It's a beautifully illustrated book.  We all had fun seeing what stories, songs and poems we remembered from our childhood.  

I can't wait to share it with my grandchildren, including Daven, who will be here (hopefully) in 58 days or less ;-)
