And so delish!
I saw a recipe for Triple Coconut Cake here and just had to try it since George and I LOVE coconut. It was easy and oh sooooo good. Our friends Mary and Larry love coconut too, so we invited them out for Mexican and then came back to our house last night for dessert. They loved it. In fact, Larry ate two BIG pieces. I sent them home with 4 more slices. Believe me, I don't want too much of this around. Yummy!
TRIPLE COCONUT CAKE
Ingredients:
1 Betty Crocker white cake mix
1-1/4 cup Coconut Milk
1 can cream of coconut
8-ounce container of whipped topping
1 cup flaked coconut
Directions:
Prepare cake mix according to directions on the box, substituting coconut milk for water in the mix. Bake in a 9×13 pan. Aimee and I both thought the cake was done at least 5 minutes before the box directions predicted. Over bake and the crust will be too dry to absorb the cream of coconut.
While the cake is still warm, poke holes all over the cake with a skewer.
Warm cream of coconut for 1-1/2 minutes on HIGH in the microwave and pour over the cake. Chill for several hours or overnight.
Frost with 1 container of thawed, whipped topping (i.e. Cool Whip). Sprinkle flaked coconut on top. Keep refrigerated. (I think it's even better the second or third day...if it lasts that long!)

We got a long hard rain shower this afternoon. That in itself is SWEET, but the new Thundershirt we got for Miss Daisy helped. Our girl does not like bad weather, especially thunder (and fireworks). Anything that will make our girl feel better is SWEET...for her and us.

It worked. Her tail was down any time it thundered and she would look up at the sound, but she didn't cower under the furniture shaking like she usually does. Actually, I got on the treadmill and she settled in and dozed while I walked. Amazing!
